    Default Chicken with red wine sauce

    Very simple dish this.

    Chop up two sticks of celery, couple of carrots, mushrooms and shallots and fry in a pan for few minutes. Next dice some chicken and fry in pan till chicken is golden colour.

    Get some baby potatoes, cut them in half and soften them in the microwave with a drop of water on a high heat for five minutes, drain and throw into a casserole dish with veg and chicken

    For the sauce - add two cups of red wine to a pot and bring to the boil for a minute or two and then add a cup of chicken stock (two stock cubes) and stir. Add some cornflour (about a half a tablespoon) to thicken and let it simmer stirring all the while for about a further five mins. Pour into casserole dish and leave it to cook at 200 C for an hour

    They may crush the flowers, and trample every living thing but they cant stop the spring..

    I think that one is with white wine, I got it off the net and ammended it for my own ends!

    Having a Mexica night on Saturday with a few beers and cooking mexican grub and Mexican films! Quick, easy and nutritious again!

    BTW Musashi lash in loads of garlic into the red wine and a dash of chilli powder, to die for!...
